The kitchen suited me from the start. After the Cordon Bleu I worked through cuisines from further afield, with Asian flavours a particular pull. Fresh produce, locally sourced fish, seafood and meat, homemade stocks — no packets, nothing from a jar. Feel matters more than any formula.

I'm a purist. It's a continuous love affair with food.

Twenty-odd years on, dinner parties and cooking for larger numbers are second nature. The moment I enjoy most is still when a guest asks for the recipe.

The kitchen I grew up in

Ireland in the sixties was conservative about food. There was nothing in our house that wouldn't be considered edible — squid, wild mushrooms, whatever we could find.
